Smoothies Anyone?

I swear I cannnot get enough smoothies lately. I guess it is the warm weather here in Kentucky that makes the cool icy drink win out over all other breakfasts lately. I also got up at 9am and figured a smootie is a little lighter of a breakfast so I can start getting back to a more normal lunch time Here are the ingredients:




1 small ripe banana, 1 6oz. container peach soy yogurt, 1 cup plain soy yogurt. It was actually one of my favorite combos I have made to date plus I used up some ingredients that were getting past their prime!


The rest of the agenda for today will be taking a walk, running errands with my mom, packing (going back to Lexington for Wednesday night/Thursday morning), phone calls, school e-mails and organzing a few things in my room at home. To be realistic I don't think I will get all this done but being able to cross something off the to do list is better than nothing.

Memorial Day Wrap Up


So today has been a laid back day. It seems lately that all I want to do is relax. I actually did not get up until almost 11am today and it was wonderful! So of course witht the delay in starting my day, my eating schedue was a little off.


For breakfast/lunch: I had a cup of homemade fruit salad and half a Panera whole grain bagel with whipped cottage cheese and black raspberry preserves


For dinner: I had 3/4 of a moe's homewreaker burrito with tofu, lettuce, pico, salsa, a little cheese and some guac.

Dessert was a lovely stop by the ice cream stand for a cup of orange sherbet.

Announcement Tease

Well I did go to Whole Foods today and got some basic stuff like yogurt, rolls (for my mom) and a few veggies. I will have to say that I love the Whole Foods in Louisville because it is so much larger than the one in Lexington.
Lunch was delicious: 1/2 of a Panera Whole Grain bagel, homemade fruit salad, and a a regular salad (lettuce, tomato, one hard-boiled egg, hummus, salsa, and black beans. It was delicious.
Dinner was actually a childhood favorite out of the freezer meal...bagel bites. Yes I had a package of cheese bagel bites. It was quick and easy but obviously not very satisfying.

Anyway I am going to be a little bit of a tease and and say that I have an exciting announcement that will be revealed on May 31st with the official start date on June 1st. I will be opening it up to all readers if anyone wants to join me. Any guesses????

So Fresh


This morning I woke up on my own just a little bit before 10am. I love summer vacation but better not get that comfortable since I start grad school on June 11.

Anyways when i woke up I decided a lovely yogurt smoothie would be the perfect addition to my usual morning meal for two reasons. 1) I love smoothies and love how they taste so fresh, 2) I had a few ingredients that I needed to use up...mainly an overripe banana.

What I used:
1 cup plain soy yogurt (that is the kind I had on hand)
1 small overripe banana
2 small handfuls fresh strawberrie
Blend the above ingredients until well combined
Then add 1/3 cup shaved ice and blend again.
It was delicious and was exactly what I was craving. Another reason I think smoothies are appealing is that they are so versatile and can easily be modified to match ingredients you have on hand.
Today's agenda: not really sure but hopefully it will include some form of exercise and maybe a trip to Whole Foods.
